Ingredients
- 2 cups penne pasta , boiled
- 1 cup cheese sauce
- 1 tablespoon olive oil
- 1 tablespoon chopped garlic
- 1 medium onion , finely chopped
- 1/2 cup tomato concasse
- Salt to taste
- 1/2 teaspoon paprika
- Crushed black peppercorns to taste
- 1/2 teaspoon sugar
- 1/2 small yellow zucchini , sliced and halved
- 1/2 small green zucchini , sliced and halved
- 1 small red capsicum , cut into triangles
- 5-6 fresh basil leaves + for greasing
- Parmesan cheese shavings for garnishing
Method
- Heat olive oil in a non-stick pan, add garlic and onion and sauté till translucent.
- Add tomato concasse, mix and saute for 2 minutes. Add salt, paprika, crushed peppercorns and sugar, mix well and saute for a minute.
- Add yellow and green zucchini and red capsicum and mix well. Add ½ cup water, mix and cook for 2 minutes. Add tear basil leaves, add to the pan and mix well.
- Add cheese sauce and mix well. Add pasta and mix well. Add parmesan cheese shavings and mix.
- Transfer into a serving bowl, garnish with some cheese shavings and a basil leaf and serve hot with garlic bread.
