By Sanjeev Kapoor 13 Aug 2019 in Recipes Course New Update Main Ingredients Fresh Pasta Dough, Chicken Cuisine Italian Course Noodles and Pastas Prep Time 26-30 minutes Cook time 26-30 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Non Veg Ingredients list for Chicken, Mushroom And Cheese Ravioli 100 grams Fresh Pasta Dough for dusting Chicken 1 Egg 2 Chicken breasts 3 medium Onion 4-6 Mushrooms 3-4 cloves Garlic 6 tablespoons Olive oil to taste Salt 1/3 teaspoon Red chilli flakes 1 cup Fresh cream 1/2 cup Processed cheese grated 1/2 teaspoon Mixed herbs 1/4 cup Parmesan cheese Method Clean, wash and cut chicken breasts into half inch sized cubes. Peel, wash and chop onions. Clean, wash and chop mushrooms. Peel, wash and chop garlic. Beat egg. Roll out the dough into a thin square sheet. Dust out the excess flour. Heat two tablespoons of olive oil in a pan and add chicken pieces and sauté till the chicken is cooked. Apply the beaten egg on the rolled out dough. Heat two tablespoons of olive oil in another pan, add one chopped onion, mushrooms, garlic, chicken cubes, salt and one teaspoon red chilli flakes. Sauté till dry. Place a teaspoonful of stuffing at regular intervals on one half of the dough sheet. Fold o Cut around the stuffing, using a cutter, into round, square or rectangular shapes taking care that the ravioli is sealed from all sides. Roll out the remaining dough again and repeat the process. Boil sufficient water in a big pan and put in the raviolis. Cook for five to six minutes. Drain away the water. For the sauce, heat remaining olive oil in a pan. Add chopped onions and sauté till transluscent. Add red chilli flakes, fresh cream, grated cheese and salt. Stir and add the cooked ravioli. Mix again. Sprinkle mixed herbs, Parmesan cheese and red chilli flakes and serve immediately.
