Ingredients list for Chicken Noodle Soup Thai Style

  • 150 grams Boneless Chicken cut into small pieces
  • 1/4 cup Boiled Noodles
  • 2 cups Chicken stock
  • 1 Lemon grass stalk
  • 1 inch Ginger
  • 2 Spring onion bulbs
  • 2 Kaffir lime leaves
  • 1 Fresh red chilli
  • Juice of ½ lemon
  • to taste Salt
  • 4-5 Fresh coriander sprigs
  • for garnishing Lemon wedge

Method

  1. Cut lemon grass into diamond shaped pieces. Roughly chop ginger.
  2. Heat chicken stock in a non-stick pan, add lemon grass and ginger and mix well.
  3. Roughly chop spring onion bulbs.
  4. Add chicken pieces and noodles to the pan and mix well. Tear lime leaves and add.
  5. Roughly chop fresh red chilli and add to the pan. Add lemon juice and mix well. Add salt and mix well. Add spring onion bulbs.
  6. Roughly chop coriander sprigs and add and mix again. Cook till chicken is done.
  7. Transfer into a serving bowl and serve piping hot garnished with a lemon wedge.
