Chilled Gazpacho Soup Escape the summer heat with our refreshing chilled gazpacho soup, a vibrant medley of fresh vegetables and zesty flavors that's a cool breeze on a sweltering day. By Sanjeev Kapoor 06 Jul 2016 in Recipes Veg New Update Chilled Gazpacho Soup Main Ingredients White bread slices, Tomatoes Cuisine Spanish, Course Soups Prep Time 0-5 minutes Cook time 15-20 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients 6 slices white bread 6 medium tomatoes, quartered 1 medium cucumber, roughly chopped 3-4 garlic cloves, chopped ½ cup olive oil Salt to taste Crushed black peppercorns to taste 1 medium green capsicum, seeded and roughly chopped 2 tablespoons wine vinegar For the garnish 1 slice white bread, cut into ½-inch cubes 1 small green capsicum, chopped 1 small onion, chopped Method Discard edges of bread slices, break into pieces and place in a bowl. Add water and soak the bread pieces for 5 minutes. Combine tomatoes, cucumber, garlic, soaked bread pieces, olive oil, salt, crushed peppercorns and water in a blender. Blend well. Add capsicum and vinegar and blend again. Strain the soup into a bowl and chill in a refrigerator. Pour the soup into individual Martini glasses.
