Chilli Cheese Toast

Slices of bread stuffed with a spicy mixture of onions, capsicum, and cheese, then grilled to perfection. This is a Sanjeev Kapoor exclusive recipe.

Ingredients

  • 6 brown bread slices
  • Butter for applying
  • 1 cheese slice
  • ¾ cup grated processed cheese
  • 1 small onion, finely chopped
  • ½ small green capsicum, finely chopped
  • ½ small red capsicum, finely chopped
  • ½ small yellow capsicum, finely chopped
  • 1 teaspoon freshly chopped coriander leaves
  • Salt to taste
  • ½ teaspoon dried red chilli flakes
  • 1 teaspoon oregano
  • Crushed black peppercorns to taste
  • Tomato ketchup to serve

Method

  1. For cheese toast, apply butter on 2 bread slices, place 1 cheese slice and apply butter on top of and place it on a griller and grill till golden brown marks appear. Apply a little butter and grill till crisp.
  2. For chilli cheese toast, add cheese in a bowl. Add onion, green and red capsicums, yellow capsicum, and chopped coriander.
  3. Add salt, red chilli flakes, oregano and crushed black peppercorns. Mix well. 
  4. Apply butter on 2 bread slices; Add a portion of the prepared mixture on one. Cover with the other slice of bread.
  5. Place it on the griller and apply butter on both sides. Grill till golden brown and crisp. 
  6. Meanwhile, to make an open cheese toast, take 2 bread slices and apply some butter on them.
  7. Top it with the cheese filling, bake in the oven at 180ºC for 10-15 minutes at till the cheese melts and it becomes crisp and golden brown. 
  8. Once the cheese toast is grilled, diagonally cut in half. Serve hot with tomato ketchup.
