Christmas Pudding This one goes the whole mile – a classic Christmas pudding loaded with goodness of dried fruits, nuts, spices and plenty of alcohol in the form of rum and sherry! By Sanjeev Kapoor 18 Dec 2017 in Recipes Course New Update Main Ingredients Refined Flour, Spices Cuisine Fusion Course Desserts Prep Time 8-10 hour Cook time 7-8 hour Serve 4 Taste Sweet Level of Cooking Moderate Others Non Veg Ingredients list for Christmas Pudding 3/4 cup Refined Flour a pinch Spices 3/4 cup Bread crumbs 4 tablespoons Butter 1/2 teaspoon Cinnamon powder 1/2 teaspoon Nutmeg powder 1/2 teaspoon Mace powder 1/2 teaspoon Lemon rind 1/2 cup Brown sugar 1/2 cup Raisins 1/2 cup Sultanas 1/4 cup Cherries 1/4 cup Candied lemon finely chopped 1/4 cup Almonds blanched, peeled and chopped 1/2 cup Carrot peeled & finely chopped 3 Eggs beaten 1/2 cup Orange juice 2 tablespoons Sherry 2 tablespoons Rum optional Method Sieve flour and salt together. Mix in breadcrumbs with the flour. Rub in butter into the flour and breadcrumb mixture. Add spice powders, lemon rind, sugar, dried fruits, candied peels and nuts. Add carrot, lightly beaten eggs and orange juice. Add sherry, rum and leave it covered overnight. Next day transfer the batter into two moulds, cover with greaseproof paper and foil and then steam in a double boiler continuously for seven hours at a steady temperature. When done cover and keep it overnight in a cool place. Reheat for atleast two hours before serving.
