By Sanjeev Kapoor 16 Oct 2013 in Recipes Course New Update Main Ingredients Prunes, Espresso coffee Cuisine Fusion Course Desserts Prep Time 11-15 minutes Cook time 41-50 minutes Serve 4 Taste Sweet Level of Cooking Moderate Others Non Veg Ingredients list for Coffee and Prune Cake 2 tablespoons Prunes 1 cup Espresso coffee chopped 200 grams Butter 1 cup Sugar 1 teaspoon Vanilla essence 3 Eggs 2 1/2 cups Refined flour (maida) 2 teaspoons Baking powder 1 teaspoon Baking soda 1 teaspoon Salt 1 teaspoon Cinnamon powder 1 cup Buttermilk 1 teaspoon Lemon rind grated 3/4 cup Toasted almonds slivered Method Preheat oven to 180 °C. Place the butter and sugar in food processor bowl and process it till creamy. Add espresso shots and vanilla essence and continue to process. Break the eggs and add and continue to process. Sift flour, baking powder, baking soda, salt and cinnamon powder and add half of it to the bowl and process. Add the remaining flour mixture and process. Add buttermilk and process again. Add lemon rind and prunes and process. Add the almond slivers and mix well. Pour the batter into a silicone mould and fill it up to three fourths its capacity. Place the mould in the preheated oven and bake for forty minutes.
