Congee Simple congee made interesting with shiitake mushrooms boneless chicken and some herbs. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 05 Mar 2019 in Recipes Course New Update Main Ingredients Rice, Boneless chicken Cuisine Chinese Course Rice Prep Time 21-25 minutes Cook time 16-20 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Non Veg Ingredients list for Congee 1 cup Rice soaked 100 grams Boneless chicken boiled and shredded 1 cup Chicken stock 5-7 Garlic cloves crushed 1 inch Ginger sliced to taste Salt 1 Spring onion with greens 4-6 Dried shiitake mushrooms soaked 2 tablespoons Sesame oil (til oil) 1 inch Ginger cut into thin strips 2 tablespoons Light soy sauce 1 tablespoon Red chilli sauce Method Heat stock in a non-stick pan, add rice, garlic, ginger and salt. Slice spring onion bulb reserving the greens, add to pan, mix and bring to a boil. Cover and cook on medium heat till rice is fully done. Roughly chop mushrooms. Heat 1 tablespoon sesame oil in another non-stick pan, add ginger strips and mushrooms and sauté on high heat. Add chicken, salt and 1 tablespoon soy sauce and mix. Remove from heat and transfer into a bowl. Add remaining soy sauce and remaining sesame oil to rice mixture, mix, cover and cook for 2 minutes. Finely chop spring onion greens. Put the rice mixture into a serving bowl and top with some mushroom-chicken mixture, chilli sauce and spring onion greens on top. Serve hot.
