Corn was indigenous to America, but is now grown throughout the world. It is used as a vegetable, briefly boiled or roasted or eaten with butter. And it would also interest you to know that the favourite popcorn, made by popping the small corn kernels, is a wholesome cereal food and is easily digested. Besides this, corn sees its use in various other ways – salads, soups, subzis and even sweets too!

Ingredients for Corn Halwa Recipe

  • Corn kernels , boiled 1 cup

  • Ghee 4 tablespoons

  • Mixed nuts , chopped 1/4 cup + to garnish

  • Semolina (suji/rawa) 2 tablespoons

  • Khoyta (mawa) 1 1/2 cups

  • Saffron strands a pinch

  • Green cardamom powder 1 teaspoon

  • Jaggery , grated 1/2 cup

  • Milk 1 cup

Method

Step 1

Put corn kernels into a blender jar and blend into a fine paste.

Step 2

Heat ghee in a non-stick pan, add nuts and sauté till lightly browned and crisp. Add semolina, mix and sauté till fragrant.

Step 3

Add corn paste and cook for 4-5 minutes, stirring continuously.

Step 4

Add khoya and mix till it melts. Add saffron strands and green cardamom powder and mix well.

Step 5

Add jaggery and mix till it melts. Add milk, mix and cook till the mixture thickens.

Step 6

Transfer into a serving bowl, garnish with nuts and serve hot.
