Ingredients list for Cottage Cheese in Burnt Garlic Sauce

  • 250 grams Paneer (cottage cheese) cut into batons
  • 2 tablespoons Garlic crushed
  • 2 tablespoons Oil
  • 1 teaspoon Celery finely chopped
  • 2 Green chillies finely chopped
  • 1½ cups Vegetable stock
  • 1 teaspoon Red chilli sauce
  • 2 teaspoons Soy sauce
  • 1 teaspoon Tomato ketchup
  • to taste Salt
  • to taste Crushed black peppercorns
  • ¼ teaspoon Sugar
  • for garnishing Fresh coriander leaves finely chopped, 2 teaspoon +
  • 1 tablespoon Cornflour/ corn starch

Method

  1. Heat oil in a deep non-stick wok, add garlic and sauté till it turns golden brown. Add celery, green chillies and vegetable stock and mix well.
  2. Add red chilli sauce, soy sauce, tomato ketchup, salt crushed peppercorns, sugar and chopped coriander and mix well.
  3. Combine water and cornflour in a bowl to make a smooth paste. Add this slurry to the pan.
  4. Add cottage cheese batons and mix well. Add vinegar and mix lightly. Cook for 3-4 minutes.
  5. Serve hot garnished with chopped coriander.
