Ingredients for Crispy Crunchy Baby Corn Recipe

  • Baby corns , blanched 10-12

  • Red chilli powder 1 1/4 teas to sprinkle

  • Turmeric powder 1/4 teaspoon

  • Garam masala powder 1 teaspoon

  • Black peppercorns , crushed 1/2 teaspoon

  • Ginger-garlic paste 1 tablespoon

  • Salt to taste

  • Oil 1 tablespo to deep fry

  • Refined flour (maida) 1 cup

  • Cornflour 1/2 cup

  • Baking soda 1 pinch

  • Cornflakes 1 cup

  • Chaat masala to sprinkle

  • Green chutney to serve

Method

Step 1

Take baby corns in a bowl, add 1 tsp red chilli powder, turmeric powder, garam masala powder, crushed black peppercorns, ginger-garlic paste and salt and mix well.

Step 2

Heat sufficient oil in a kadai

Step 3

Take refined flour, cornflour, baking soda, remaining red chilli powder and a pinch of salt in another bowl. Add ½ cup water and 1 tbsp oil and mix well to make a thick and smooth batter. Crush the cornflakes and add to the batter and mix well.

Step 4

Dip baby corns in this batter and slide into hot oil and deep fry on medium heat till golden brown. Drain on absorbent paper.

Step 5

Sprinkle red chilli powder and chaat masala over them.

Step 6

Transfer into a serving basket and serve hot with green chutney.
