This term Continental cuisine refers to the food eaten in the European countries. Under the mantle of Continental food come the British, American, Italian, New Zealand, Armenian, Hungarian, Russian and many other European cuisines.

Ingredients for Cubed Zucchini in Cashew Sauce Recipe

  • Zucchini cut into small cubes 2 medium

  • Oil 1 tablespoon

  • Onion chopped 1 small

  • Fresh green peas 1/2 cup

  • Cashewnuts roasted and finely chopped 2 tablespoons

  • Coriander seeds 1 teaspoon

  • Cumin seeds 1 teaspoon

  • Cloves 4

  • Cinnamon 1/2 inch stick

  • Ginger 1 inch stick

  • Lemon 1/4 teaspoon

  • Salt to taste

  • Red chilli powder 1/4 teaspoon

Method

Step 1

Heat oil in a non stick pan, add onions and saute till soft. Add zucchini and green peas. Saute for two minutes.

Step 2

Make a paste with cashewnuts, coriander seeds, cumin seeds,cloves, cinnamon stick and ginger piece.

Step 3

Add the above paste to the pan and saute well. Add turmeric powder, salt and red chilli powder, and half cup water. Mix well. Cover and cook for ten minutes.

Step 4

Serve hot with roti.
