Perfect for summers, its a good sources of a wide range of nutrients, including vitamins C and B6 By Sanjeev Kapoor 25 Apr 2018 in Recipes Veg New Update Cucumber Gazpacho Main Ingredients Cucumber, Garlic Cuisine Spanish Course Soups Prep Time 0-5 minutes Cook time 0-5 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients 2 medium cucumbers, peeled 1 medium cucumber 1 medium green capsicum 3-4 garlic cloves 1 cup green grapes 1 teaspoon lemon juice Salt to taste Crushed black peppercorns to taste 10-12 fresh mint leaves 1 tablespoon olive oil + for drizzling Method Reserve ¼ part of the cucumber for garnishing and peel rest of the cucumber. Slice cucumbers, roughly chop capsicum. Place them in the blender jar, add garlic, grapes, lemon juice, salt, pepper powder and mint leaves and blend till smooth. Add olive oil and blend till smooth.
