Ingredients 

  • 2 medium cucumbers, peeled
  • 1 medium cucumber
  • 1 medium green capsicum
  • 3-4 garlic cloves
  • 1 cup green grapes
  • 1 teaspoon lemon juice
  • Salt to taste
  • Crushed black peppercorns to taste
  • 10-12 fresh mint leaves
  • 1 tablespoon olive oil + for drizzling

Method 

  1. Reserve ¼ part of the cucumber for garnishing and peel rest of the cucumber.
  2. Slice cucumbers, roughly chop capsicum. Place them in the blender jar, add garlic, grapes, lemon juice, salt, pepper powder and mint leaves and blend till smooth. Add olive oil and blend till smooth.
  3. Serve garnished with reserved cucumber and grapes and drizzle olive oil.
