Middle Eastern cuisine comprises of food eaten by the people of the various countries of the Middle East. The cuisine of the region is diverse while having a degree of homogeneity.  Some commonly used ingredients include olives and olive oil, pitas, honey, sesame seeds, dates, sumac, chickpeas, mint and parsley.

Ingredients for Cumin And Black Olive Hummus Recipe

  • Cumin powder roasted 1/2 teaspoon

  • Black olives chopped 2-3

  • Chickpeas (kabuli chana) boiled 2 cups

  • Garlic chopped 1 teaspoon

  • Salt to taste

  • Tahini 1/3 cup

  • Olive oil 2 tablespoons

  • Lemon juice 2 tablespoons

  • Pita bread 2

  • Red chilli powder 1 teaspoon

Method

Step 1

Mix chickpeas, garlic and salt in a bowl. Put this mixture in a mixer jar and grind, stirring up the contents with a spoon in between.

Step 2

Add 2 tsps tahina and 1 tsp olive oil and continue to grind. Add the rest of tahina and a little olive oil and grind.

Step 3

Add a little water, roasted cumin powder, 1 tsp lemon juice and grind till smooth.

Step 4

Preheat oven to 180°C. Slit the pita breads and cut into strips and further cut into small triangles.

Step 5

Arrange the triangles on a baking tray and toast in the preheated oven till light brown and crisp.

Step 6

Transfer the hummus into a serving bowl. Make a well in the centre and drizzle the remaining olive oil into it.

Step 7

Garnish with black olives and sprinkle red chilli powder. Serve with the pita chips.
