Favourite seafood? Prawns, prawns and more of prawns. A wide variety of small crustaceans, tiny relatives of the lobster, are known as prawns. Prawns are normally translucent when raw but get their distinctive pink or red colour on being cooked. one word of caution – if buying unpeeled prawns, smell for freshness and look for bright, shiny shells that have some spring left in them.

Ingredients for Curry Leaf Prawns Recipe

  • Jumbo prawns shelled and deveined with tail intact 6-8

  • Curry leaves 1 cup

  • Ginger-garlic paste 1 tablespoon

  • Lemon juice 1 tablespoon

  • Salt to taste

  • Crushed black peppercorns 1 teaspoon

  • Bread crumbs fresh 1 cup

  • Red chilli flakes 1 teaspoon

  • Oil to deep fry

Method

Step 1

Dry roast curry leaves in a non-stick pan.

Step 2

Put prawns in a bowl, add ginger-garlic paste, lemon juice, salt and pepper powder and mix well.

Step 3

Transfer the curry leaves in a mixer jar and grind coarsely.

Step 4

Mix curry leaves, breadcrumbs, chilli flakes, pepper powder, salt and mix well.

Step 5

Coat each prawn in the prepared mixture.

Step 6

Heat sufficient oil in a kadai.

Step 7

Deep-fry the prawns in hot oil till crisp and brown on both the sides.

Step 8

Transfer on a serving plate and serve hot.
