Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Dalia Kheer Recipe

  • Broken wheat (dalia) 5 tablespoons

  • Ghee 2 tablespoons

  • Cashewnuts , broken 8-10

  • Milk 2 1/2 cups

  • Jaggery powder 3 tablespoons

  • Green cardamom powder 1/4 teaspoon

  • Nutmeg powder a pinch

Method

Step 1

Heat ghee in a pressure cooker, add cashewnuts and saute till golden brown. Drain on absorbent paper.

Step 2

Add broken wheat to the ghee remaining in the cooker and sauté on medium heat for 1 minute. Add milk, jaggery powder, green cardamom powder and nutmeg powder and mix well.

Step 3

Add half of fried cashewnuts, cover and pressure cook on high heat for 5-6 minutes.

Step 4

Open the cooker when the pressure settles, transfer the kheer into a serving bowl, garnish with the remaining fried cashewnuts and serve hot.
