History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Dates and Anjeer Modak - SK Khazana Recipe

  • Dates chopped 1 cup

  • Dried figs chopped 3/4 cup

  • Pistachios 2 tablespoons

  • Raisins 2 tablespoons

  • Almonds 1/4 cup

  • Dried coconut ( khopra) grated 2 tablespoons

  • Poppy seeds (khuskhus/posto) 2 tablespoons

  • Green cardamom powder 1/2 teaspoon

Method

Step 1

Put pistachios, raisins, and almonds in a food processor and process to a coarse powder. Add dried coconut, poppy seeds and green cardamom powder and process to a coarse paste.

Step 2

Transfer the coarse paste into a large bowl and mix. Take a portion of the mixture and stuff into a modak mould, gently press and demould.

Step 3

Arrange the dates and anjeer modaks on a serving plate. Serve.
