Ingredients list for Dum Methi Murgh

  • 750 grams Chicken cut into 2 inch pieces on the bone
  • 2 teaspoons Kasuri Methi
  • 2 tablespoons ghee
  • 6-8 black peppercorns
  • 3-4 Green cardamoms
  • 1-2 cloves
  • 1 star anise
  • 1 inch cinnamon stick
  • 1 black cardamom
  • 3-4 green chillies slit
  • 1 onion chopped
  • 1 tablespoon Garlic Paste
  • 1 tablespoon ginger paste
  • 3/4 cup yogurt
  • 1/4 teaspoon turmeric powder
  • Salt to taste
  • 2 tablespoons Almond Paste
  • Readymade dough for sealing

Method

  1. Heat ghee in a deep non-stick pan, add black peppercorns, green cardamoms, cloves, star anise, cinnamon stick, and black cardamom and sauté till fragrant.
  2. Add green chillies and sauté for a minute. Add onion, mix and sauté till translucent. Add garlic paste and ginger paste and sauté for 1-2 minutes.
  3. Take chicken in a bowl, add yogurt, turmeric powder and salt and mix well. Transfer this into the pan and sauté for 3-4 minutes on high heat.
  4. Reduce the heat, add almond paste and kasuri methi and mix well. Add ½ cup water and mix.
  5. Seal the rim of the pan with the dough and cover with a lid. Cook for 15-20 minutes, switch the heat off and transfer the gravy into a serving bowl. Serve hot.
