You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Cook time : 6-10 minutes

Ingredients for Egg and Mayo Sandwich Recipe

  • Eggs soft boiled and peeled 6

  • Mayonnaise as required

  • White bread slices 8

  • Onions small finely chopped 2

  • coriander leaves 2 tablespoons

  • Chilli powder 3/4 teaspoon

  • Salt to taste

  • Butter for toasting

  • Tomato ketchup to serve


Step 1

Take eggs on a plate, lightly mash using a fork. Add onion, chopped coriander and chilli powder and salt and lightly mix.

Step 2

Apply mayonnaise on bread slices and place a generous portion of the prepared mixture on one slice of bread and cover with another slice of bread.

Step 3

Heat butter in a non-stick tawa, place the prepared sandwich on it and cook till golden brown. Flip the sandwich and add butter on the sides.

Step 4

Halve the sandwich and serve hot with tomato ketchup.
