Ingredients list for Energy Bar

  • 1 cup Oats
  • 2 tablespoons Almonds , chopped
  • 2 tablespoons Cashewnuts , chopped
  • 2 tablespoons Walnuts , chopped
  • 2 tablespoons Pistachios , chopped
  • 2 tablespoons Flax seeds
  • 2 tablespoons Pumpkin seeds
  • 2 tablespoons Sunflower seeds
  • 1/4 cup Cranberries , chopped
  • 1/2 cup Date paste
  • 1/3 cup Honey
  • 1/4 teaspoon Salt
  • 1 tsp + for greasing Butter

Method

  1. Heat a non-stick pan, add oats and dry roast on medium heat for 3-4 minutes. Transfer onto a plate and set aside to cool.
  2. In a same pan add almonds, cashewnuts, walnuts, pistachios, flax seeds, pumpkin seeds and sunflower seeds and dry roast on medium heat for 2-3 minutes,
  3. Transfer onto another plate and set aside to cool.
  4. Grease a barfi tray with butter.
  5. Take cranberries in a mixing bowl, add oats, mixed nuts and seeds and date paste and mix well. Gradually add honey and mix well.
  6. Transfer this mixture onto the greased barfi tray, spread it evenly and keep it in refrigerator for 1½ hours.
  7. Cut into required shape, demould and serve.
