Ingredients 

  • 4 large potatoes, boiled, peeled and cut into ½ inch cubes
  • 1 tablespoon ghee
  • 1/2 teaspoon cumin seeds
  • 2 green chillies, finely chopped
  • 4 tablespoons peanuts, roasted and crushed
  • Salt to taste
  • 1/2 teaspoon sugar
  • 1/4 cup scraped fresh coconut 
  • 2 tablespoons chopped fresh coriander leaves

Method

  1. Heat ghee in a non-stick pan and add cumin seeds. Once the seeds begin to change color, add green chillies and sauté for half a minute.
  2. Add potatoes and continue to sauté till crisp.
  3. Add peanuts, salt, sugar and coconut and mix well. Cover and cook on low heat for four to five minutes.
  4. Transfer into a serving plate, garnish with coriander leaves and serve hot.
