Ingredients list for Fish in Butter Paper

  • 2 Fish fillets
  • 4 Butter paper sheets
  • to taste Salt
  • to taste Crushed black peppercorns
  • 4 Lemons
  • 2 medium Red capsicum , cut into small squares
  • 2 medium Yellow capsicums , cut into small squares
  • 2 medium Green capsicum , cut into small squares
  • 2 cups Brown rice , cooked
  • 16-20 cloves Garlic
  • 8-12 sprigs Fresh dill leaves
  • 8 tablespoons Cream cheese
  • 1 cup Fresh cream
  • 12 slices Lemon

Method

  1. Spread each butter paper on table top and halve it. Cut them into squares and further cut them into rounds with one set being a little smaller than the other.
  2. Halve each fish fillet and place in a large bowl. Add salt, crushed black peppercorns and lemon juice. Add the coloured capsicum squares and mix well and let them marinate for 10-15 minutes.
  3. Preheat the oven to 190° C.
  4. For each parcel, place ½ cup cooked brown rice in the centre of each bigger round piece of butter paper sheet, sprinkle 4-5 garlic cloves and place 1 fish piece over it. Top with some capsicum squares and 2-3 sprigs of dill.
  5. Mix cream cheese and cream in a small bowl and mix well. Put some this mixture over the vegetables. Place 3 lemon slices at some distance from each other.
  6. Cover with the smaller round and fold the edges of the 2 paper rounds together all around so that there is no opening anywhere.
  7. Place the parcels in a baking tray, place the tray in the preheated oven and bake for 12-15 minutes.
  8. The paper will get slightly burnt.
  9. Bring the tray out of the oven and serve in the paper itself. It should be opened just before eating.
