Ingredients

  • 3 onions, sliced thinly
  • 1 tablespoon clarified butter (ghee)
  • 1 tablespoon butter + as required
  • 5 cups brown stock
  • Salt to taste
  • Black pepper powder to taste
  • 1 teaspoon mustard paste
  • ¼ cup grated mozzarella cheese
  • ¼ cup grated processed cheese
  • 4 bread slices, cut into triangles and toasted

Method

  1. Heat clarified butter and butter in a deep non-stick pan. Add onion and sauté till well browned.
  2. Add brown stock, stir to mix and bring it to a boil.
  3. Add salt, pepper powder and mustard paste. Stir to mix and boil for 2-3 minutes.
  4. Add half the mozzarella and processed cheese, mix well and switch off heat.
  5. Pour soup into 4 individual soup bowls. Spread butter on toasted triangles and top with portion of both the remaining cheese.
  6. Place 2 triangles in each bowl and serve piping hot.
