By Sanjeev Kapoor 16 Nov 2016 in Recipes Course New Update Main Ingredients Coconut Freshly Scraped, Pineapple Slices Cuisine Indian Course Mithais Prep Time 1.30-2 hour Cook time 11-15 minutes Serve 4 Taste Sweet Level of Cooking Moderate Others Veg Ingredients list for Fresh Nariyal and Pineapple Burfi 2 cups Coconut Freshly Scraped freshly scraped 4 tinned Pineapple Slices for greasing Ghee 2 tbsps + 1 cup Sugar a pinch Green cardamom powder 2 tablespoons Powdered sugar Method Heat ghee in a non stick pan, add coconut and saute. Grind pineapple slices and add to the coconut and mix well. Add sugar and stir till sugar melts. Add green cardamom powder and mix. Cook till all the moisture is absorbed and the mixture forms a lump Add powdered sugar and mix well. Grease an aluminium burfi tray with ghee and transfer the coconut mixture onto it. Spread it evenly and set aside to cool. Cut into squares and serve.
