Ingredients list for Gamberi Aglio E Olio

  • 28-30 Prawns shelled and deveined
  • 2 tablespoons Garlic
  • 1 medium Yellow zucchini
  • to taste Salt
  • 1 teaspoon Crushed black peppercorns
  • 8 Cherry tomatoes
  • 1 tablespoon Garlic finely chopped
  • 1 Green chilli finely chopped
  • 1/3 cup Grated green zucchini
  • 1/3 cup Yellow zucchini grated
  • 8-9 Basil leaves
  • 6 tablespoons Tomato sauce
  • 2-3 Lollo rosso leaves
  • Dressing
  • 3 tablespoons Olive oil
  • Juice of 1 lemon
  • to taste Salt
  • ¼ teaspoon Crushed black peppercorns

Method

  1. Heat 1 tbsp olive oil in a non-stick pan.
  2. Cut yellow zucchini into thin slices vertically. Add salt, ½ tsp crushed peppercorns, 1 tsp olive oil and rub the slices well.
  3. Place slices in the pan and grill, flipping, for 2-3 minutes on each side. Remove from heat and place on a plate.
  4. Halve cherry tomatoes. Add garlic and 1 tbsp olive oil in the same pan and sauté for 1 minute.
  5. Add prawns, salt, remaining crushed peppercorns, green chilli and halved cherry tomatoes. Toss and add grated green and yellow zucchini, 3-4 torn basil leaves. Toss again and sauté well.
  6. Add tomato sauce, mix well and cook till prawns are done.
  7. To make dressing, combine lemon juice, salt, crushed peppercorns and olive oil in a bowl and whisk well.
  8. Place grilled zucchinis on a serving plate. Tear Lollo rosso leaves and place on it. Drizzle the dressing on top and put 2-3 basil leaves on it. Place cooked prawns on it, garnish with remaining basil leaves and serve immediately.
