Ingredients

  • 1 gherkin
  • 1 tablespoons capers
  • 1/4 cup skimmed milk yogurt
  • 15-18 fresh coriander sprigs
  • 1½ teaspoo fresh parsley chopped
  • 3 teaspoons lemon juice
  • Salt to taste
  • Crushed black peppercorns to taste
  • 1 1/4 teaspoons castor sugar 

Method

  1. Chop coriander leaves and place in a bowl. Add chopped parsley.
  2. Chop gherkin and add.
  3. Roughly chop capers and add alongwith lemon juice, salt, crushed peppercorns, castor sugar and yogurt and mix well.
  4. Garnish with chopped parsley and serve as an accompaniment with your choice of starter.
