Goan Style Spinach

Healthy and tasty is the only way to describe this dish. Spinach leaves are tempered and cooked with tomatoes and toovar dal. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 2 medium bunch spinach, cleaned
  • 2 tablespoons oil
  • 1/2 teaspoon mustard seeds
  • 1 medium onion, finely chopped
  • 2 medium tomatoes, finely chopped
  • 2 green chillies, chopped
  • Salt to taste
  • 2-3 tablespoons split pigeon peas (tuvar dal), cooked
  • 1/2 cup dal stock
  • 3 tablespoons scraped fresh coconut 

Method

  1. Roughly chop spinach leaves.
  2. Heat oil in a non-stick pan. Add mustard seeds and let them splutter.
  3. Add onion and saute well. Add tomatoes, mix and saute for 2 minutes.
  4. Add spinach, green chillies and salt, mix well and cook.
  5. Add pigeon peas, dal stock, mix well, cover and cook for 3-4 minutes.
  6. Add coconut and mix well.
  7. Serve hot.
