Treasure house of vitamins and minerals, spinach must be included in the week's menu. The usage can be varied: chopped spinach leaves cooked with potatoes is a semi-wet vegetable with rotis, a few spinach leaves thrown in with mixed vegetables and turned into a soup is lovely on a cold winter night, chopped and blanched spinach makes a different sort of raita, spinach puree can be used in cutlets or kababs, the list goes on.

Ingredients for Goan Style Spinach-SK Khazana Recipe

  • Spinach cleaned 2 medium bunch

  • Oil 2 tablespoons

  • Mustard seeds 1/2 teaspoon

  • Medium onion finely chopped 1

  • Medium tomatoes finely chopped 2

  • Green chillies chopped 2

  • Salt to taste

  • Split pigeon peas (tuvar dal) cooked 2-3 tablespoons

  • Dal stock 1/2 cup

  • Fresh coconut scraped 3 tablespoons


Step 1

Roughly chop spinach leaves.

Step 2

Heat oil in a non-stick pan. Add mustard seeds and let them splutter.

Step 3

Add onion and saute well. Add tomatoes, mix and saute for 2 minutes.

Step 4

Add spinach, green chillies and salt, mix well and cook.

Step 5

Add pigeon peas, dal stock, mix well, cover and cook for 3-4 minutes.

Step 6

Add coconut and mix well.

Step 7

Serve hot.
