Ingredients

  • 2 cups rolled oats
  • ½ cup chopped almonds
  • ½ cup chopped walnuts
  • 3 tablespoons butter
  • ½ cup honey
  • A pinch of salt
  • ½ cup brown sugar
  • 2 teaspoons vanilla essence
  • ½ cup dried cranberries
  • ½ cup chocolate chips

Method

  1. Preheat the oven at 100˚C. Line a barfi tray with parchment paper.
  2. In a baking tray, add rolled oats, chopped almonds, and chopped walnuts, mix well. Roast for 10-15 minutes.
  3. Heat butter in a non-stick deep bottom pan, add honey, a pinch of salt, brown sugar and mix well. Cook till the sugar melts.
  4. Add vanilla essence, mix well and let the mixture come to a boil. Take it off the heat and set aside.
  5. In a large bowl, add the butter-sugar mixture and roasted oats-nuts mixture, dried cranberries, chocolate chips and mix well.
  6. Add the prepared mixture in the barfi tray, spread it evenly, press down firmly until uniformly flattened.
  7. Refrigerate till set. Cut into bars and serve.
