Ingredients

  • 2 medium cucumbers
  • 2 medium green capsicums
  • 1 medium green apple
  • 2 tablespoons finely chopped celery 
  • 1 green chilli 6-8 walnut kernels, roughly chopped
  • 1 teaspoon chopped garlic
  • Salt to taste
  • Crushed black peppercorns to taste + for sprinkling
  • 1 tablespoon olive oil + for drizzling
  • 1 teaspoon vinegar Olive oil for drizzling

Method

  1. Peel and cut cucumbers into small cubes. Halve capsicums and remove seeds. Core the apple and cut capsicums and apple into cubes. Transfer all these into a blender jar.
  2. Add celery, broken green chilli, walnuts, garlic, salt, crushed peppercorns, 2 tablespoons olive oil and vinegar and blend into a smooth mixture.
  3. Strain the mixture into another bowl. Pour into individual bowls. Drizzle some olive oil and sprinkle some crushed peppercorns.
  4. Serve immediately.
