Green Masala Fish Fry

Fish darnes marinated in vibrant green chutney, coated with a crispy semolina-rice flour mixture, and shallow-fried to a golden perfection. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 1 medium Surmai fish, cut into darnes
  • ½ medium bunch fresh coriander leaves + for garnishing 
  • 2-3 green chillies
  • 6-8 garlic cloves
  • Salt to taste 
  • 1 tablespoon lemon juice
  • ½ cup semolina (rawa/suji)
  • 1 tablespoon rice flour
  • Oil for shallow frying 
  • ½ lemon for garnishing 

Method

  1. Grind together coriander leaves, green chillies, garlic cloves, salt and lemon juice with some water to a smooth paste.
  2. Take fish darnes in a bowl. Add salt and mix. Add ground paste and mix well. Set aside to marinate for 10-15 minutes.
  3. Spread semolina on a plate. Add rice flour and mix well.
  4. Coat each marinated fish darn with semolina mixture.
  5. Heat some oil in a non-stick pan. Shallow-fry the fish, turning sides, till evenly cooked, golden and crisp on both sides. Drain on absorbent paper.
  6. Serve hot garnished with coriander leaves and halved lemon.
