Italian cuisine has developed through centuries of social and political changes, with roots stretching to antiquity.  Italian cuisine is simple and a number of dishes having only four to eight ingredients.  They rely mostly on the quality of ingredients rather than elaborate preparation.

Ingredients for Green Pea and Goat Cheese Risotto Recipe

  • Fresh green peas puree 1 cup

  • Goat cheese 2 tablespo for garnish

  • Risotto rice 1 1/2 cups

  • Olive oil 4 tablespoons

  • Garlic chopped 3 tablespoons

  • Medium onion finely chopped 1

  • White wine 4-6 tablespoons

  • Vegetable stock 6 cups

  • Fresh cream 2 tablespoons

  • Butter 2 tablespoons

  • Micro greens for garnish

Method

Step 1

Heat olive oil in a deep non-stick pan, add garlic and onion, and sauté till translucent.

Step 2

Add rice, mix and sauté for 2 minutes. Add white wine and mix well.

Step 3

Add rice, mix and sauté for 2 minutes. Add white wine and mix well. Add vegetable stock and salt and mix well. Cook for 4-5 minutes or till the moisture is almost absorbed, stirring occasionally.

Step 4

Add green peas puree and mix well. Cook for 10-12 minutes or till the rice is cooked.

Step 5

Add fresh cream, butter and goat cheese, mix well and cook for 1 minute.

Step 6

Transfer into a serving bowl, garnish with goat cheese and micro greens and serve hot.
