By Sanjeev Kapoor 23 Mar 2021 in Recipes Course New Update Main Ingredients Fresh green peas puree, Goat cheese Cuisine Italian Course Rice Prep Time 6-10 minutes Cook time 31-40 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Green Pea and Goat Cheese Risotto 1 cup Fresh green peas puree 2 tablespo for garnish Goat cheese 1 1/2 cups Risotto rice 4 tablespoons Olive oil 3 tablespoons Garlic chopped 1 Medium onion finely chopped 4-6 tablespoons White wine 6 cups Vegetable stock 2 tablespoons Fresh cream 2 tablespoons Butter for garnish Micro greens Method Heat olive oil in a deep non-stick pan, add garlic and onion, and sauté till translucent. Add rice, mix and sauté for 2 minutes. Add white wine and mix well. Add rice, mix and sauté for 2 minutes. Add white wine and mix well. Add vegetable stock and salt and mix well. Cook for 4-5 minutes or till the moisture is almost absorbed, stirring occasionally. Add green peas puree and mix well. Cook for 10-12 minutes or till the rice is cooked. Add fresh cream, butter and goat cheese, mix well and cook for 1 minute.
