Grilled Chicken Chutney Sandwich

Marinated boneless chicken grilled, mixed with green chutney and mayonnaise, spread between two bread slices and grilled in a sandwich griller. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Grilled Chicken Chutney Sandwich

  • 250 grams Boneless chicken breasts
  • 2-3 tablespoons Green chutney
  • 8 White bread slices
  • 7-8 Fresh basil leaves
  • 3-4 Fresh parsley sprigs
  • 2 Thyme sprigs
  • 1 tablespoon Garlic chopped
  • to taste Salt
  • to taste Crushed black peppercorns
  • 1 teaspoon Red chilli flakes
  • Olive oil 1½ teaspoons + for grilling
  • ½ cup Mayonnaise
  • as required Butter

Method

  1. Chop basil leaves, parsley, take thyme leaves and put all these together in a bowl.
  2. Slice chicken breasts horizontally into two and add to the bowl along with garlic, salt, crushed peppercorns, red chilli flakes and 1½ teaspoons olive oil. Mix well and set aside to marinate for 15-20 minutes.
  3. Heat some olive oil in a non-stick grill pan. Place the chicken on it along with the marinade and grill till grill marks appear on both sides and the chicken is cooked. Remove from heat and cool to room temperature.
  4. Shred grilled chicken into small pieces and place in a bowl. Add mayonnaise and green chutney and mix well.
  5. Apply butter on 4 bread slices, place a portion of chicken mixture on them and cover with remaining 4 bread slices. Spread some more butter on top of the sandwiches.
  6. Heat a sandwich griller. Place the sandwiches on top, cover and grill till grill marks appear on the sandwiches.
  7. Cut into triangles and serve hot.
