Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Grilled Mushroom Melts Recipe

  • Button mushrooms thinly sliced 8-10

  • Cheddar cheese grated as required

  • Mozzarella cheese grated as required

  • Ciabatta bread sliced 1

  • Oil 1 tablespoon

  • Onion finely chopped 1 medium

  • Garlic chopped 1 tablespoon

  • Salt to taste

  • Crushed black peppercorns to taste

  • Mixed herbs ½ teaspoon

  • Butter for spreading + for greasing

Method

Step 1

Preheat an electric griller.

Step 2

Heat oil in a non-stick pan. Add onion and sauté for a minute. Add garlic and sauté till golden.

Step 3

Add mushrooms, mix and cook for 1 minute. Add salt and crushed peppercorns and mix. Add dried herbs, mix and cook for 2-3 minutes.

Step 4

Spread some butter on each bread slice. Put some cheddar cheese, mushroom mixture and some mozzarella cheese on top of half the bread slices and cover with remaining bread slices.

Step 5

Grease the preheated electric griller with some butter. Grill the sandwich still golden on both sides.

Step 6

Cut into halves and serve hot.
