Ingredients for Grilled Vegetable Cheese Sandwich Recipe

  • Bread loaf 1

  • Red capsicum 1-inch traingles 10-12

  • Green capsicum 1-inch traingles 10-12

  • Green zucchini roundles 10-12

  • Yellow zucchini roundles 10-12

  • Yellow zucchini 1-inch traingles 10-12

  • Cheddar cheese block as required

  • Emmental cheese block as required

  • Red chilli flakes 1 teaspoon

  • Crushed black peppercorns to taste

  • Dried mixed herbs 1/2 teaspoon

  • Garlic , chopped 1 teaspoon

  • Olive oil 1 tablespo to grill

  • Salt to taste

  • Butter as required

  • Ketchup to taste


Step 1

Take red capsicum in a bowl, add green capsicum, green zucchini, yellow zucchini, yellow capsicum, red chilli flakes, black peppercorns, dried mixed herbs, garlic, olive oil and salt and mix well.

Step 2

Heat some oil in a non-stick grill pan, add the marinated vegetables and grill the vegetables till done.

Step 3

Slice the bread loaf thickly.

Step 4

Heat some butter in a non-stick pan, place 2 bread slices at a time in it and toast, turning sides, till evenly golden on both sides.

Step 5

Grate some cheddar cheese over the toasted slices. Now grate some emmental cheese over them.

Step 6

Spread some grilled vegetables over one slice and cover it with the other, cheese side facing downwards.

Step 7

Heat another non-stick pan, grate some cheddar cheese followed by some emmental cheese. When they melt and merge, keep the sandwich over it and fold in the edges to shape like a bowl. Remove from the pan and place on a plate. Lift the sandwich and place on a serving plate and place the cheese bowl over it.

Step 8

Make more sandwiches in the same way.

Step 9

Serve hot with tomato ketchup.
