Grilled Vegetable Cheese Sandwich

Ingredients
- 50 grams cheddar cheese
- 50 grams emmental cheese
- 10-12 red capsicum triangles
- 10-12 green capsicum triangles
- 10-12 green zucchini roundels
- 10-12 yellow zucchini roundels
- 10-12 yellow capsicum triangles
- 1 uncut bread loaf
- 1 teaspoon red chilli flakes
- Crushed black peppercorns to taste
- ½ teaspoon dried mixed herbs
- 1 teaspoon chopped garlic
- 1 tablespoon + 1 teaspoon olive oil
- Salt to taste
- 1 tbsp butter
- Tomato ketchup for serving
Method
- Take red capsicum in a bowl. Add green capsicum, green zucchini, yellow zucchini, yellow capsicum, red chilli flakes, crushed black peppercorns, dried mixed herbs, garlic, 1 tablespoon olive oil and salt and mix well.
- Heat remaining olive oil in a grill pan. Add the marinated vegetables and cook for 4-5 minutes.
- Cut bread loaf into thick slices.
- Heat butter in a shallow nonstick pan. Toast the bread slices till crisp.
- Grate some cheddar cheese and some emmental cheese on bread slices and cook till cheese melts.
- Arrange the vegetables on one slice and cover with another slice.
- Heat the same nonstick pan. Grate remaining cheddar cheese and remaining emmental cheese and cook till cheese melts.
- Place the prepared sandwich and cover it with cheese. Serve hot with tomato ketchup.
