Ingredients 

  • 50 grams cheddar cheese
  • 50 grams emmental cheese
  • 10-12 red capsicum triangles
  • 10-12 green capsicum triangles
  • 10-12 green zucchini roundels
  • 10-12 yellow zucchini roundels
  • 10-12 yellow capsicum triangles
  • 1 uncut bread loaf
  • 1 teaspoon red chilli flakes
  • Crushed black peppercorns to taste
  • ½ teaspoon dried mixed herbs
  • 1 teaspoon chopped garlic
  • 1 tablespoon + 1 teaspoon olive oil
  • Salt to taste
  • 1 tbsp butter
  • Tomato ketchup for serving

Method

  1. Take red capsicum in a bowl. Add green capsicum, green zucchini, yellow zucchini, yellow capsicum, red chilli flakes, crushed black peppercorns, dried mixed herbs, garlic, 1 tablespoon olive oil and salt and mix well.
  2. Heat remaining olive oil in a grill pan. Add the marinated vegetables and cook for 4-5 minutes.
  3. Cut bread loaf into thick slices.
  4. Heat butter in a shallow nonstick pan. Toast the bread slices till crisp.
  5. Grate some cheddar cheese and some emmental cheese on bread slices and cook till cheese melts.
  6. Arrange the vegetables on one slice and cover with another slice.
  7. Heat the same nonstick pan. Grate remaining cheddar cheese and remaining emmental cheese and cook till cheese melts.
  8. Place the prepared sandwich and cover it with cheese. Serve hot with tomato ketchup.
