How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Gudwali Kheer Recipe

  • Rice soaked and drained 1/2 cup

  • Powdered jaggery 3/4 cup

  • Milk 4 cups

  • Ghee 2 tablespoons

  • Cashewnuts 10-12

  • Raisins 2 tablespoons

  • Green cardamom powder 1/2 teaspoon

Method

Step 1

Heat milk in a deep non-stick pan, add rice, mix well and cook, stirring regularly.

Step 2

Heat ghee in another non-stick pan, add cashewnuts and raisins and sauté.

Step 3

Add cardamom powder and mix well. Switch off the heat and cool down to room temperature. When the cashewnuts and raisins are lightly browned transfer them into a bowl.

Step 4

Place the 2nd pan back on heat, add powdered jaggery and ½ cup water and stir continuously till the jaggery dissolves. Switch off the heat and let it cool down slightly.

Step 5

When the rice is fully done, switch off the heat and stir till the mixture cools slightly.

Step 6

Reserve some sautéed nuts for garnishing and add the remaining to the rice mixture and mix.

Step 7

Add the jaggery water to the rice mixture and mix well.

Step 8

Transfer the kheer into serving bowls, garnish with reserved nuts and serve immediately.
