Gulkand Shahi Tukda Shahi tukda gets a new identity with gulkand – oh so very rose flavoured. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 08 Aug 2016 in Recipes Course New Update Main Ingredients Gulkand, White bread slices Cuisine Indian Course Mithais Prep Time 11-15 minutes Cook time 31-40 minutes Serve 4 Taste Sweet Level of Cooking Easy Others Veg Ingredients list for Gulkand Shahi Tukda 3 tablespoons Gulkand 6 White bread slices 2 cups Reduced milk 6 teaspoons Ghee 1 cup Sugar ¼ cup Mawa (khoya) a pinch Green cardamom powder 7-8 Rose petals 2 tablespoons Mixed nuts (cashewnuts, pistachios) Method Preheat oven at 180ºC. Toast bread slices till crisp in a toaster. To make rabdi, heat reduced milk in a deep non-stick pan and brings to a boil. Add sugar and mix well. Add mawa, mix well and cook for 10-15 minutes, stirring continuously. Apply 1 teaspoon ghee on each toasted bread slice. Spread 1 tablespoon gulkand on three toasted bread slices. Cover with remaining three bread slices making a sandwich. Add cardamom powder to the rabdi and mix well. Roughly chop rose petals, reserve some for the garnish and add the remaining to the rabdi. Mix well. Cut sandwiches into squares and arrange them in a glass baking dish. Pour over the prepared rabdi. Roughly chop mixed nuts and sprinkle over the baking dish. Put the dish in the preheated oven and bake for 10-12 minutes.
