Ingredients 

  • 4 eggs
  • Salt to taste 
  • ½ teaspoon vinegar 
  • 4 English muffins, diagonally halved
  • Crushed black peppercorns to taste
  • Iceberg lettuce leaves for serving 
  • Roasted cherry tomato halves for serving

Method

  1. Boil sufficient water in a pan. Add salt and vinegar. 
  2. Break one egg in a bowl. 
  3. Stir the boiling water mixture, drop in the egg and poach for 3 minutes. Drain on an absorbent paper. 
  4. Place the poached egg on the base of the muffin, sprinkle some salt and crushed peppercorns on top. 
  5. Serve with few iceberg lettuce leaves and roasted cherry tomato halves.
