Ingredients list for Jain Mexican Rice

  • 1½ cups Rice soaked
  • 2 tablespoons mexican paste
  • 1 tablespoon Olive oil
  • ½ cup Cabbage shredded
  • 1 teaspoon Red chilli flakes
  • 3 cups Vegetable stock
  • to taste Salt
  • ½ Corn kernels boiled
  • ½ medium Green capsicum

Method

  1. Heat oil in a non-stick pan. Add cabbage and sauté till golden. Drain rice and add to the pan and mix well. Add Mexican paste and chilli flakes and mix well.
  2. Add 3 cups vegetable stock and mix well. Add salt, mix, cover and cook till rice is half done.
  3. Add corn kernels and capsicum, mix, cover and cook till rice is fully done.
  4. Serve hot.
