Kachumber Salad

A colorful, refreshing salad of diced tomatoes, cucumber, onion, capsicum, and carrot, tossed with green chilies, coriander, lemon juice, and salt. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 1 tomato
  • 1 cucumber
  • 1 onion
  • 1 green capsicum
  • 1 carrot
  • 1 teaspoon chopped fresh coriander leaves
  • 1 teaspoon lemon juice
  • 1/2 white radish
  • 2 teaspoon chopped green chillies
  • Salt to taste

Method

  1. Wash and cut tomatoes into half inch dices.
  2. Wash, peel and cut cucumber and carrots into half inch dices. Wash and peel onions and radish and cut into dices.
  3. Wash, deseed capsicum and cut into half inch dices.
  4. Wash and chop the green chillies.
  5. Clean, wash and chop the coriander leaves.
  6. Mix all the vegetables.
  7. Add chopped green chillies, chopped coriander leaves, lemon juice and salt.
  8. Toss well.
  9. Arrange in a salad bowl and serve cold.
