The Maharashtrian hospitality is legendary. The cuisine has subtle variety and strong flavours and varies from region to region. In ancient times in the more affluent homes, feasts often started at mid-day and ended when the sun set! Ingredients for Kairi Poha Recipe

  • Raw mango 1

  • Pressed rice (poha) soaked and drained 2 cups

  • Oil 2-3 tablespoons

  • Onion 1 medium

  • Asafoetida a pinch

  • Mustard seeds 1/2 teaspoon

  • Cumin seeds 1 teaspoon

  • Curry leaves 8-10

  • Raw peanuts 1 tablespoon

  • Green chillies slit 2

  • Potato boiled 1 medium

  • Turmeric powder 1/2 teaspoon

  • Red chilli powder 1/2 teaspoon

  • Green peas boiled 1/4 cup

  • Salt

  • Sugar 2 teaspoons

  • Fresh coriander sprigs for garnish

Method

Step 1

Heat oil in non stick pan. Roughly chop onion.

Step 2

Add asafoetida, mustard seeds, cumin seeds, curry leaves and onion to the pan and sauté till the onion is well browned.

Step 3

Peel and roughly chop raw mango

Step 4

Add raw peanuts and green chillies to the pan. Roughly chop boiled potato and add alongwith turmeric powder and red chilli powder and mix well.

Step 5

Add green peas, raw mango, salt and sugar. Mix well and add poha. Sprinkle a little water and toss to mix.

Step 6

Cook for 2-3 minutes. Serve hot garnished with coriander sprig.
