Ingredients list for Kasundi Tangdi Kebab

  • 4-5 Chicken drumsticks
  • 2 tablespoons Kasundi mustard paste
  • to taste Salt
  • 1/2 teaspoon Turmeric powder
  • Lemon halved
  • 1/2 cup Hung yogurt
  • 1 tablespoon Ginger-garlic paste
  • 2 tablespoons Mustard oil
  • 1/2 teaspoon Dried fenugreek leaves powder
  • a few + to grease Small cubes of butter
  • for basting Melted butter
  • to serve Salad
  • to serve Green chutney
  • to serve Lemon wedges

Method

  1. Make incisions in the chicken drumsticks and place them in a bowl. Add salt, turmeric powder and squeeze the juice of ½ lemon and mix well. Set aside to marinate for 10-15 minutes.
  2. Take hung yogurt in another bowl, add kasundi mustard paste, ginger-garlic paste, mustard oil and dried fenugreek leaves powder and mix well.
  3. Add salt and squeeze the juice of the remaining ½ lemon and mix well. Add the chicken drumsticks and mix till all the chicken drumsticks are well coated. Set aside to marinate for 1-2 hours.
  4. Preheat the oven to 200˚C.
  5. Grease a baking tray with butter and place the marinated chicken drumsticks on it. Place a few cubes of butter on top of each chicken drumstick. Keep the tray in the preheated oven and bake for 15-20 minutes, turning and basting with melted butter occasionally.
  6. Remove the chicken drumsticks from the oven, place them on a serving plate, brush them with melted butter and serve hot with salad, green chutney and lemon wedges.
