The Maharashtrian hospitality is legendary. The cuisine has subtle variety and strong flavours and varies from region to region. In ancient times in the more affluent homes, feasts often started at mid-day and ended when the sun set! The presentation of food was alluring with a practice to sing sacred verses to dedicate the meal to God.
Maharashtrian cuisine covers a wide range from being extremely mild to very spicy dishes. Wheat, rice, jowar, vegetables, lentils and fruit form important components of Maharashtrian diet. 
Everybody knows about the unbeatable taste of the Mumbai’s chaats! But there is so much more to explore and savour in the other regions of Maharashtra.

Ingredients for Kesari Recipe

  • Semolina 1 cup

  • Milk 1 cup

  • Few strands of saffron

  • Ghee 1/3 cup

  • Almond slivers 5-6

  • Cashewnuts chopped 5-6

  • Raisins 5-6

  • Sugar 1/3 cup

  • Green cardamom powder 1/2 teaspoon


Step 1

Dissolve saffron in a tablespoon of milk. Heat ghee in a kadai. Fry almonds, cashewnuts and raisins. Drain and keep aside.

Step 2

Add rawa to the same ghee and roast it till it is golden brown.

Step 3

Heat remaining milk with one cup of water. When it comes to a boil add it to the roasted rawa. Cook, stirring continuously, so that rawa separates out.

Step 4

Add soaked saffron, sugar and green cardamom powder. Mix well. Continue to cook till all the water has been absorbed. Garnish with fried almonds, cashewnuts and raisins. Serve hot.
