The Maharashtrian hospitality is legendary. The cuisine has subtle variety and strong flavours and varies from region to region. In ancient times in the more affluent homes, feasts often started at mid-day and ended when the sun set! Ingredients for Kharvas Recipe

  • Colostrum 3/4 litre

  • Milk 3/4 cups

  • Sugar 1 1/4 cup

  • Green cardamom powder 3/4 teaspoon

  • Nutmeg a pinch

  • Saffron (kesar) a few strands


Step 1

Mix all the ingredients well. Heat some water in a pressure cooker.

Step 2

Pour the mixture into a deep container and steam in the pressure cooker for ten minutes over medium heat.

Step 3

Lower heat and continue to steam for fifteen minutes longer.

Step 4

Remove the container from the cooker and set aside to cool.

Step 5

Chill in a refrigerator for a couple of hours. Cut into cubes and serve.
