Ingredients
- 150 grams green peas
- 100 grams French beans
- 250 grams onions
- 2 medium sweet potatoes
- Oil to shallow fry
- 3 tomatoes, chopped
- 3-4 green chillies, chopped
- 3 tablespoons chopped fresh coriander leaves
- 1/2 bunch fresh mint leaves, chopped
- 3 carrots
- 2 medium potatoes
- 250 grams yam
- 6-8 garlic cloves ,chopped
- 1 inch ginger piece
- 3 tablespoons vinegar
- 2 tablespoons sugar
- Salt to taste
Method
- String the fresh beans and cut it into dices, peel the pickling onion, peel and cut the carrots, potatoes, yam and sweet potatoes into dices. Heat oil and shallow fry all the above vegetables individually.
- Heat 2 tablespoons of oil in a pan and sauté the sliced onion till light golden in colour then add chopped tomatoes, chopped green chillies, chopped coriander leaves, chopped mint leaves, chopped ginger and chopped garlic. Cook on a slow heat for 4-5 minutes.
- Add the fried vegetables and mix. Then add vinegar, sugar and salt. Simmer for 4 - 5 minutes remove and serve hot.
