Ingredients 

  • 40 button mushrooms, quartered
  • 10 babycorns, diagonally sliced
  • 5 stalks spring onion greens, chopped
  • 1/2 teaspoon cumin seeds
  • 4-5 cloves
  • 2 medium onions, chopped
  • 1 tablespoon ginger-garlic paste
  • 1/4 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chilli powder
  • 1/4 cup tomato puree
  • Salt to taste
  • A few sprigs of fresh coriander
  • 1/2 teaspoon garam masala powder

Method

  1. Heat a non stick pan, add cumin seeds and cloves and roast till fragrant. Add onions and roast on medium heat, stirring continuously till golden.
  2. Add ¼ cup water, ginger-garlic paste and mix well. Add turmeric powder, coriander powder, red chilli powder, tomato puree and mix well.
  3. Add babycorns and mushrooms and mix. Add 1 cup water and mix. Add salt, cover and cook for 2-3 minutes.
  4. Chop spring onion greens and add to the pan and mix. Chop coriander leaves and add and mix. Add garam masala powder and mix. Cover and cook for 5-7 minutes.
  5. Transfer into a serving bowl and serve hot.
