Ingredients list for Kumroni

  • 1/2 Medium red pumpkin peeled
  • 4 tablespoons Gram flour (besan)
  • to deep fry Oil
  • 2 tablespoons Rice flour
  • 1/2 teaspoon Onion seeds
  • to taste Salt
  • 1/4 teaspoon Turmeric powder
  • to serve Tomato ketchup

Method

  1. Cut the pumpkin into 1½ inch rectangular pieces of medium thickness. Transfer into a bowl.
  2. Heat sufficient oil in a kadai.
  3. Take gram flour in a mixing bowl, add rice flour, nigella seeds, salt, turmeric powder and sufficient water and whisk to make a smooth batter of medium thick consistency.
  4. Dip the pumpkin pieces in the batter till well coated and slide into hot oil. Deep- fry, on medium heat, till golden and crisp. Drain on absorbent paper.
  5. Transfer them onto a serving platter and serve hot with tomato ketchup.
