By Sanjeev Kapoor 07 Mar 2017 in Recipes Course New Update Main Ingredients Boneless mutton, Tomato concasse Cuisine Greek Course Main Course Mutton Prep Time 26-30 minutes Cook time 41-50 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Non Veg Ingredients list for Lamb Stifado 500 grams Boneless mutton cut into medium cubes, 2 cups Tomato concasse 3 Garlic cloves chopped 6 Cloves 2 inch Cinnamon 1 teaspoon Fresh oregano 2 tablespoons Red wine 1 tablespoon Red wine vinegar 4 tablespoons Olive oil 10-12 Shallots 2 tablespoons Tomato puree to taste Salt 1 teaspoon Paprika smoked to taste Crushed black peppercorns for garnishing Fresh parsley chopped Method Place the lamb cubes in a large bowl. Add the garlic, cloves, cinnamon, oregano, red wine and red wine vinegar, mix well and set aside to marinate for twenty to thirty minutes. Heat olive oil in a non-stick pan. Add the shallots and sauté for five minutes. Remove from pan and set aside. Add the marinated lamb cubes and sauté till well browned from all sides. Reserve the marinade. Add the sautéed shallots along with the reserved marinade, tomato concasse, tomato puree and sufficient water and stir to mix. Add salt, paprika and crushed peppercorns and mix well. Bring to a boil, reduce heat and simmer for thirty to forty minutes. Add parsley and mix well. Serve hot.
