Ingredients list for Lemony Fiesta

  • 1 Sponge cake 8 inch
  • Vanilla ice cream
  • 8 scoops Vanilla ice cream softened
  • 1 Kiwi fruit peeled and sliced
  • FOR LEMON SAUCE
  • 1 teaspoon Lemon rind grated
  • 2 teaspoons Cornflour/ corn starch
  • 40 measures Sugar Free Natura
  • a pinch Lemon yellow colour
  • 1 1/2 tablespoons Lemon juice

Method

  1. Halve the sponge cake horizontally and then cut four roundels with a cutter. Place one on each serving plate.
  2. Heat one cup of water in a pan. Add lemon rind and let it come to a boil. Reduce heat and simmer for two to three minutes. Mix cornflour in a little water.
  3. Add Sugar Free Natura and a small pinch of yellow colour to the pan and mix. Add cornflour mixture and cook till the sauce thickens slightly.
  4. Take it off the heat and add lemon juice and mix. Spread a little of this sauce on the cake roundels. Place two scoops of vanilla icecream over it. Place the kiwi slice on the top.
  5. Pour the remaining sauce over and serve immediately.
