Ingredients list for Mango Sago Pudding

  • 1 cup Mango pulp
  • ¾ cup Sago (sabudana) soaked for 30 mins
  • 2 tbsps + for greasing Ghee
  • 1 cup Milk reduced
  • 1/4 cup Sugar
  • 1/4 teaspoon Green cardamom powder
  • For topping Desiccated coconut
  • for garnishing Plum fan

Method

  1. Heat ghee in a non-stick pan. Add sago and sauté for 1 minute.
  2. Add reduced milk and stir well. Add sugar and cardamom powder, stir to mix and cook for 2 minutes.
  3. Add mango pulp, mix well and cook till the sago is fully cooked and mixture thickens.
  4. Grease a glass baking dish with some ghee. Pour the cooked mixture in it and spread evenly, cool to room temperature and refrigerate till set.
  5. Top with desiccated coconut, garnish with the plum fan and serve chilled.
