Mango and Crumbled Cheese Salad This vibrant salad combines juicy mango cubes with crumbled feta cheese, crisp romaine lettuce, and a medley of fresh ingredients including pico de gallo, green and black olives, and sliced jalapeños. By Sanjeev Kapoor 04 May 2019 in Recipes Veg New Update Main Ingredients Ripe mangoes, Feta cheese Cuisine Mexican Course Salads Prep Time 6-10 minutes Cook time 0-5 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Veg Ingredients 1 ripe mangoes, peeled, deseeded and cut into cubes 2 tablespoons crumbled feta cheese 5-6 romaine lettuce leaves ½ cup pico de gallo 1 tablespoon sliced green olives 1 tablespoon sliced black olives 1 tablespoon Jalapeno sliced Jalapeno-coriander dressing ½ cup chopped coriander leaves Salt to taste 1 teaspoon lemon juice 3-4 tablespoons oil 3 fresh jalapenos Method Slice jalapenos and blend with lemon juice, salt and oil till smooth. Tear romaine lettuce and add to the bowl, add Pico de Gallo, green and black olives, jalapenos, mangoes and dressing reserving some. Mix well.
